The pumpkin season is long gone. The gingerbread and peppermint season has just passed. What are we supposed to bake now?!
I’m thinking something homely. I’m thinking comfort food. I’m thinking something that will go perfectly with a nice hot cup of coffee.
January is tough and February is even tougher. Why? When winter started back in October/November we were looking forward to Halloween and all things pumpkin spiced. Then, we were thinking about apple pies and Thanksgiving. Until just recently, it was peppermint this… and peppermint that… and how many cinnamon rolls can we fit in our mouth at one time on Christmas day.
Now? Now we have this lull of very, very cold weather until we start thinking about chocolate and Valentine’s Day. Even then, Valentine’s Day is only fun for those in relationships. What about our single ladies out there!?

This recipe is L O A D E D with flavor! It’s perfect for January. It’s exactly what we need right now to bring us through this winter.
Strawberry and White Chocolate Coffee Cake
1 tablespoon sugar
1/2 teaspoon cinnamon
1 teaspoon vanilla sugar
85g butter (melted)
Zest of 1/2 an orange
3/4 cup frozen strawberries chopped
Small handful of white chocolate chips
Preheat oven to 180 degrees Celsius or 350 degrees Fahrenheit. Prepare a loaf form by greasing the bottom and all 4 edges. This is important when the time comes to remove your cake from the form. For best results try a silicon form!
Mix together 1 tablespoon of sugar and 1/2 teaspoon cinnamon. Set aside. This is your topping to the coffee cake.
Beat the sugar, eggs and vanilla until fluffy. About 7 minutes.
Fold in the flour and melted butter.
Finally, fold in the orange zest, chopped strawberries and white chocolate chips.
Pour into prepared form and sprinkle the cinnamon and sugar topping evenly over the batter.
Bake first, for about 15 minutes. Carefully, slide out the rack and with a sharp knife, slice a slit right down the middle of the cake. Slide the rack back in and bake for an additional 35-45 minutes or until a toothpick comes out clean. **This will help the cake bake, as well as creating a nice opening at the top of your cake!
