Sacher Cake
A Sacher cake is made using real, melted chocolate (as opposed to cocoa powder). It is a rich, dense cake that holds up great inside layered cakes such as this one!
Serves: 1 cake bottom 18cm
  • 50 g butter, softened
  • 40 g powdered sugar
  • 50 g egg yolks (about 2½)
  • 50 g 50 g dark chocolate, melted
  • 75 g egg whites (about 2½)
  • 40 g sugar
  • 50 g flour
  1. Prepare the cake ring (18 cm) on a baking sheet lined with baking paper. Preheat the oven to 190 C or 375 Fahrenheit.
  2. Whip together the butter, powdered sugar, and egg yolks in the mixing machine.
  3. Add the dark chocolate.
  4. Meanwhile beat the egg whites and sugar until stiff peaks form.
  5. Fold the egg whites into the yolks.
  6. Finally, fold in the flour.
  7. Pour into prepared cake ring and bake until compeltely baked through, about 20 minutes.
