Chocolate Glaze
This is a recipe to top off your desserts and cakes. Glazing the top of any mousse dessert takes baking to the next level! This makes more than enough for one cake, but can also be frozen for a later date!
  • 75 g water
  • 150 g sugar
  • 150 g glukose
  • 100 g condensed milk
  • 10 g gelatin
  • 60 g cold water
  • 150 g dark chocolate
  1. Bring the water, sugar, and glukose to a boil over the stove.
  2. Remove from heat and add the condensed milk, bloomed gelatin and dark chocolate. Mix with an immersion blender to form a smooth glaze.
  3. Heat slightly before using.
  4. Can be stored in the refrigerator for a few days, or in the freezer for a later use.
