Easter Challah (Zopf)

Serves: 1 Zopf appx. 50 cm long
Ingredients
  • 500 g flour (4 cups)
  • 42 g fresh yeast (2.5 tablespoons active dry yeast)
  • 250 ml whole milk, warm (1 cup)
  • 150 g sugar (3/4 cup)
  • 120 g butter, melted (1/2 cup)
  • pinch of salt
  • 50 g eggs (1 egg) + plus an egg for the egg wash (1 egg with a tablespoon of water)
Instructions
  1. Start by dissolving the yeast in the warm milk and adding just a tablespoon of the sugar.
  2. Pour over top the flour and let sit for 15 minutes.
  3. Mix together the melted butter, salt, egg, and the rest of the sugar.
  4. Begin mixing the flour and yeast in the mixing machine with the dough hook. Add the butter mixture and knead until a smooth dough occurs.
  5. Remove the bowl from the machine and cover with a kitchen towel. Place in a a warm spot and let rise for about 45 minutes to an hour.
  6. Once risen, remove the dough frrom the bowl and separate the dough into 4 equal parts using a scale.
  7. Roll each piece into a 60 cm long strand.
  8. Secure the ends of the strands together.
  9. Cross the right outer strand over the right inner strand.
  10. Cross the left inner strand over the right inner strand.
  11. Cross the right outer strand over the right inner strand.
  12. Cross the left outer strand under the left inner strand.
  13. Cross the left inner strand over the right inner strand.
  14. Repeat steps 9-13 until the entire bread is braided.
  15. Secure the ends of the strands at the bottom together.
  16. Place on a baking sheet lined with baking paper.
  17. Brush lightly wish an egg wash (1 egg with a tablespoon of water) and let rise for another 40 minutes.
  18. Preheat the oven to 175 Celsius or 345 Fahrenheit.
  19. Bake for about 30-40 minutes until golden brown. If the bread becomes too dark too fast, cover with aluminum foil and continue baking.
  20. Remove from oven, let cool and enjoy!
